    <p>Необходимость поиска путей импортозамещения в области производства биологически активных веществ и функциональных ингредиентов на их основе заставляет ученых и производителей искать пути валоризации отечественного сырья, например разработка новых и оптимизация существующих протоколов извлечения биологически активных веществ из различных природных источников. В качестве источников рассматриваются вторичные сырьевые ресурсы консервных и других пищевых производств. К перспективным видам сырья относится Облепиха крушиновидная (Hippophaë rhamnoides L.), богатая гидрофильными и липофильными биологически активными соединениями. Ценность липидов семян облепихи связывают с высоким содержанием ненасыщенных жирных кислот и жирорастворимых компонентов. Цель исследования заключалась в изучении особенностей жирнокислотного состава флюидных экстрактов семян облепихи, полученных при варьировании технологических режимов процесса экстракции. Изучено влияние рабочего давления (от 10,13 до 20,27 МПа) и скорости подачи СО2 (от 2 до 4 л/мин) на выход экстракта и его жирнокислотный состав. Наибольший выход экстракта (9,29 ± 0,20 %) достигнут при давлении 20,27 МПа и скорости подачи СО2 4 л/мин. Исследован жирнокислотный состав экстрактов, полученных при варьировании технологических параметров экстракции. Установлено, что в целом он соотносится с литературными данными, но в отдельных образцах обнаружены редкие насыщенные жирные кислоты со средней длиной углеводородной цепи: ундециловая С11:0 в количестве 0,16 %, лауриновая С12:0 (0,12 %) и тридециловая С13:0 (0,14 %). Высокое содержание линолевой (до 66 %) и α-линоленовой (до 17,39 %) жирных кислот делает экстракт косточки облепихи ценным источником эссенциальных полиненасыщенных жирных кислот, что позволит использовать его в качестве функционального ингредиента для обогащения молочной продукции.</p>

   <trans-abstract xml:lang="en">
    <p>Domestic raw materials offer numerous solutions for import substitution of biologically active substances and functional ingredients. New or improved protocols make it possible to extract biologically active substances from various natural sources, including secondary raw materials obtained as wastes of canning and other food industries. Sea buckthorn (Hippophaë rhamnoides L.) is rich in hydrophilic and lipophilic biologically active compounds. Its seeds contain a lot of unsaturated fatty acids and fat-soluble components. The article describes the effect of different extraction modes on the yield and fatty acid composition of fluid sea buckthorn extracts. The working pressure was 10.13-20.27 MPa; the CO2 feed rate was 2-4 L/min. The biggest extract yield (9.29 ± 0.20 %) was achieved at 20.27 MPa and 4 L CO2/min. In general, the results correlated with other scientific reports. However, some samples appeared to contain some rare saturated fatty acids with medium chain hydrocarbons, i.e., 0.16 % undecylic C11:0, 0.12 % lauric C12:0, and 0.14 % tridecylic C13:0. The high content of linoleic (≤66%) and α-linolenic (≤17.39%) fatty acids makes fluid sea buckthorn seed extracts a valuable source of essential polyunsaturated fatty acids to be used as a functional ingredient in fortified dairy products.</p>
